Ingredients
2 tablespoons
Olive oil
2 pounds
Boneless skinless chicken breasts (cut into 1/2-inch pieces)
14 1/2 ounces
Chicken broth (store bought or homemade)
8 cups
Swiss chard (chopped)
OR kale
OR spinach
2
Carrots (chopped)
1
Onion (chopped)
1
Lemon (halved and sliced)
4 teaspoons
Grated lemon zest
1/2 teaspoon
Pepper
4 cups
Cooked rice
Step by Step Instructions
- Heat a tablespoon of oil in a skillet over medium high heat. Brown half of the chicken and transfer it to a 6 quart slow cooker. Repeat with the other half of oil and chicken.
- Add the broth, greens of choice, carrots, onion, lemon, zest, and pepper to the slow cooker. Cook the mixture for 4 to 5 hours.
- Stir in the rice and heat the mixture through.
