Ingredients
2 tablespoons
Unsalted butter
1/4 cup
Onion (chopped)
4 ounces
Mushrooms (sliced)
2 cups
Cooked lamb meat (diced)
1 1/2 cups
Cooked rice
2 14 1/2-ounce
Cans tomatoes (undrained)
1 1/2 teaspoons
Salt
1/4 teaspoon
Pepper
1/2 teaspoon
Curry powder
2 to 4 teaspoons
Grated cheese
Step by Step Instructions
- Heat the oven to 350 degrees. Grease a 2-quart casserole dish.
- Melt the butter in a skillet and cook the onion until it is tender. Add the mushrooms and saute until lightly browned.
- Put the diced lamb, cooked rice, tomatoes, salt, pepper, curry powder, and sautéed onions & mushrooms, and the liquid from the skillet into a bowl. Mix gently until combined.
- Put the lamb mixture into the casserole dish, then top it with the grated cheese. Bake for 30 minutes, then serve.
