Ingredients
FOR THE DRESSING:
1/4 cup
Olive oil
2 tablespoons
Balsamic vinegar
1 teaspoon
Dijon mustard
1 tablespoon
Maple syrup
1/2 clove
Garlic (minced)
Salt & pepper to taste
FOR THE SALAD:
4 cups
Microgreens
2
Peaches (sliced)
1
Avocado (thinly sliced)
1/2 of a
Small onion (preferably red) (thinly sliced)
1/2 cup
Feta cheese (crumbled)
1/2 cup
Pecans (toasted & chopped)
Step by Step Instructions
- Make the dressing: Combine olive oil, balsamic vinegar, Dijon mustard, maple syrup, and garlic in a small jar. Cover and shake the jar until the contents are well mixed. Season to taste, then set aside.
- Put the microgreens of choice, peaches, avocado, red onion, feta cheese, and pecans into a large bowl. Toss until well combined, add the dressing, toss again, then serve.
