Ingredients
2 cups
Oats
1 cup
Unsweetened coconut flakes
1 cup
Sliced nuts (original recipe uses almonds)
1/4 cup
Flaxseed
3 tablespoons
Coconut sugar
1 teaspoon
Salt
1/2 cup
Coconut oil (melted)
1/2 cup
Honey
1 teaspoon
Vanilla extract
1/4 cup
Bee pollen
For serving:
Milk
OR yogurt
Step by Step Instructions
- Preheat oven to 350 degrees. Toss the sliced nuts, coconut flakes, flaxseed, coconut sugar, cinnamon, and salt together in a bowl.
- Whisk the warm melted coconut oil with the honey & vanilla extract. Pour the liquid mixture over the bowl of dry goods, then toss again to coat.
- Line a baking sheet with parchment paper, spread the granola out evenly, then bake for 15 minutes, toss, then bake for 10 more.
- Remove the granola from the oven, sprinkle in the pollen, and toss to mix it in. Place a layer of parchment paper over the granola and press it down lightly.
- Once cooled, enjoy the granola by itself, with milk as cereal, or over yogurt.
