Steak with Balsamic Gooseberry Sauce

Ingredients
2 tablespoons
Butter
1
Onion (diced)
1 tablespoon
Flour
1/2 cup
White wine
1 cup
Chicken stock
1/2 teaspoon
Salt
1/2 teaspoon
Pepper
1/2 cup
Balsamic vinegar
1 1/2 cups
Gooseberries (peeled)
4
T-bone steaks (bone in)
Salt & pepper
1 tablespoon
Butter
Step by Step Instructions
- Melt the butter in a large saucepan, then add the onions. Cook them until the are soft, then add the flour and cook until it has just browned.
- Add the white wine, chicken stock, salt, and pepper and let the mixture simmer for 5 minutes. Add the vinegar and gooseberries and let simmer for 3 more minutes. Set the mixture aside and keep it warm.
- Dry the steaks gently with a paper towel and season them with salt & pepper.
- Heat a cast iron pan on the stove over medium-high heat and melt 1 tablespoon of butter in the pan. Sear the steak for 2 minutes on each side. If it needs more time to suit your preferences, cook for 30 second intervals on each side until it is to your liking.
- Plate the steaks and pour the gooseberry sauce over them.
