Grilled Sweet Potatoes in Foil

Vegan!
Ingredients
1 medium sized
Sweet potato
1/4 teaspoon
Olive oil
1 pinch
Sea salt
Fresh herbs (optional)
Step by Step Instructions
- Set the grill to 350 degrees (cook the sweet potatoes using indirect heat. For gas grills, turn off the burners immediately under the sweet potato.)
- Cut a piece of aluminum foil large enough to wrap around a sweet potato.
- Spray or rub the olive oil onto the sweet potato and sprinkle the salt over it (and fresh herbs if desired). Using a fork, poke holes in the potato, then wrap it in the foil.
- Place the wrapped potato onto the grill, then cook with indirect heat for 40 minutes (longer if the potato is very large).
