Sri Lanka Vegan Banana Blossom Curry

Ingredients
1 Banana blossom
2 tablespoons Oil
1 sprig Curry leaves (optional)
1/2 of an Onion (sliced)
2 cloves Garlic (sliced)
1 knob Fresh ginger (grated)
1 Chili pepper (sliced lengthwise)
1 1/4 cups Coconut milk
1/4 teaspoon Chili powder
1/4 teaspoon Chili flakes
1 teaspoon Turmeric
1/2 teaspoon Salt
1 teaspoon Tamarind juice
OR lime juice

Step by Step Instructions
  1. Peel the outermost layers of the banana blossom and cut the remaining portions into quarters and put them into a bowl of water. Peel the small hard pistils out of the flowers, then chop the flowers up and add them to the bowl of water.
  2. Heat the oil to medium-high in a skillet, then fry the curry leaves for a few seconds (if using). Add the prepared onion, garlic, and chili pepper until they are golden.
  3. Drain and rinse the banana blossom, then squeeze out the water.
  4. Add the fresh ginger, the spices, and the banana blossom to the skillet and let cook for 5 minutes. Add the coconut milk and let cook for 5 more minutes.
  5. Add the Tamarind or lime juice, taste and season as desired, then serve with rice.
