Beer Battered Deep Fried Salmon

Ingredients
2 pounds Salmon
Oil for frying
FOR THE BEER BATTER:
1 cup Flour
1/2 cup Corn starch
1 teaspoon Baking powder
2 teaspoons Onion powder
1 teaspoon Paprika
1 teaspoon Kosher salt
1/2 teaspoon Pepper
12 ounces Light beer
1 Egg
Lemon slices (for garnish)

Step by Step Instructions
  1. Remove the skin and pin bones from the salmon and cut the meat into evenly sized pieces. Heat 4 inches of oil to 375 degrees in a Dutch oven.
  2. Mix the dry batter ingredients together, then gently whisk in the beer and the egg until the mixture is smooth. Dip the salmon pieces into the batter, drag them across the top of the hot oil then drop them in to fry (up to 4 pieces at a time)
  3. Cook the pieces for 3 to 4 minutes per side, then put them onto a wire rack to cool. Serve with desired sides & sauces and lemon slices for garnish.
