Golden Pineapple Curry

Ingredients
FOR THE CURRY SAUCE:
5 large Garlic cloves (peeled, left whole)
2 small Shallots (peeled and left whole)
1 2 inch piece Ginger (peeled and left whole)
1 2 inch piece Turmeric (peeled and left whole)
4 Dried red chilies (stem taken off and left whole)
1 teaspoon Sea salt
3/4 cup Water
ADDITIONAL INGREDIENTS:
1 1/2 cups Full fat coconut milk
1 cup Cauliflower (cut into small pieces)
1 Bell pepper (cut into chunks)
2 cups Green cabbage (sliced)
1 cup Pineapple (cut into small pieces)
2 cups Firm tofu (cut into small pieces)
1 cup Cilantro
Rice for serving, if desired.

Step by Step Instructions
  1. Put all of the ingredients in the curry sauce section into a blender and blend for 2 minutes.
  2. Pour the curry sauce into a pan, turn the heat to medium-low, then add all of the other ingredients.
  3. Cook, gently stirring for 25 to 30 minutes. Serve with rice if desired.
