Balsamic Glazed Oyster Mushrooms

Ingredients
1 1/2 pounds
Cleaned oyster mushrooms
5 tablespoons
Olive oil (divided)
3/4 teaspoon
Cumin
3/4 teaspoon
Coriander
3/4 teaspoon
Garlic powder
3/4 teaspoon
Chilli powder
3/4 teaspoon
Turmeric
3/4 teaspoon
Smoked paprika
1/2 teaspoon
Red pepper flakes
1/2 teaspoon
Kosher salt
Juice from 1 lemon
3 tablespoons
Balsamic glaze
Step by Step Instructions
- Preheat oven to 400 degrees. Heat a skillet over medium heat. Tear the mushrooms apart into large flat chunks, then drizzle them with olive oil.
- Put the mushrooms into the pan and cook them for 3 to 4 minutes on each side. When they have cooked, put them onto a plate lined with paper towels to cool.
- Whisk the olive oil and all of the spices together in a small bowl. Mix the lemon juice & balsamic glaze together in a separate small bowl.
- Brush each side of the mushroom pieces with the spice mixture. Put the seasoned mushrooms onto a baking sheet lined with parchment paper.
- Layer the mushrooms into a stack and insert 4 wooden skewers to make the pile stand upright. Drizzle generously with some the balsamic mixture and blot up any that spills onto the parchment paper.
- Bake for 10 minutes, then add the rest of the balsamic mixture to and bake for 10 more minutes. Remove the pan from the oven and slice into portions.
