Serves: 1 large salad
Vegetarian!
Ingredients
1 cup
Microgreens
1/2 cup
Grated carrots
and/or beets
1/4 cup
additional finely sliced veggies such as:
Snow peas
Radishes
Onions
and/or Chives
1/2 cup
Finely chopped fruit such as:
Apples
Pears
Berries
And/or oranges
1/4 cup
Sliced tomatoes
1/4 cup
Feta cheese
1/4 cup
Sunflower or pumpkin seeds
Pecans (optional)
Garbonzo beans (optional)
Oil for dressing
Vinegar for dressing
Step by Step Instructions
- Wash and spin or press the microgreens to drain them of excess liquid. Wash and slice the other fruits and veggies.
- Mix the microgreens, fruits, and veggies together.
- Top the salad with seeds, nuts, and feta
- Add oil and vinegar for dressing and mix the salad again if desired.
