Lemon Chicken with Tai Basil

<p><span class="caps">INGREDIENTS</span>:<br /> Boneless chicken breasts<br /> Lemon juice<br /> Olive Oil<br /> Salt & Pepper<br /> Garlic<br /> Fresh Thai Basil</p> <p><span class="caps">MARINADE</span></p> <p>zest of 1/2 lemon</p> <p>1/4 cup fresh lemon juice (about 1 lemon, reserve leftover juice)</p> <p>2 <span class="caps">TBS</span> olive oil</p> <p>Salt and Pepper to taste (we use a coarse salt such as kosher,and fresh ground pepper</p> <p>1 clove garlic, chopped or pressed</p> <p>1/4 cup fresh Thai basil.</p> <p>Put in a ziploc bag, squeeze out air. Turn every 30 minutes or so to coat</p> <p><span class="caps">GRILL</span> <span class="caps">CHICKEN</span></p> <p>grill over high heat for 4-5 min. first side.</p> <p>Turn over and grill for 4-5 minutes more.</p> <p>Let breasts rest away from heat for 6-8 min.</p> <p>Top with reserved lemon juice and garnish with Thai Basil.</p>Source: Albani Kitchen (Entered by Donna Putney)
